As the days lengthen and the air in Denver starts to warm up, there's still a little chill in the evenings. Spring is here, but the temperatures can be unpredictable, leaving us craving meals that are light yet comforting. One dish that strikes the perfect balance for these cool evenings is crispy golden garlic Chicken Piccata—a bright, tangy, and delicious meal that feels like a warm hug, but won't weigh you down as you welcome the season.

Ingredients:

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1/2 cup all-purpose flour (for dredging)

2 tablespoons olive oil

2 tablespoons butter

4 garlic cloves, minced

1/2 cup dry white wine (or chicken broth)

1/4 cup fresh lemon juice (about 2 lemons)

2 tablespoons capers, drained

1/4 cup fresh parsley, chopped

Lemon slices, for garnish (optional)

Instructions:

1. Prepare the Chicken:

Start by seasoning the chicken breasts with salt and pepper on both sides.

Dredge the chicken in flour, shaking off any excess. This will give the chicken a slight crispiness when cooked.

2. Cook the Chicken:

Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Remove the chicken from the pan and set it aside on a plate, covered with foil to keep warm.

3. Make the Lemon-Garlic Sauce:

In the same skillet, reduce the heat to medium. Add the butter and let it melt.

Add the minced garlic and cook for about 1 minute, until fragrant, but be careful not to let it burn.

Pour in the white wine (or chicken broth) and lemon juice. Use a wooden spoon to scrape up any brown bits from the bottom of the skillet (these add lots of flavor!).

Stir in the capers and let the sauce simmer for about 3-5 minutes, reducing slightly.

4. Combine and Serve:

Return the chicken breasts to the pan, spooning some of the sauce over the top. Cook for an additional 2-3 minutes to warm the chicken through and allow the flavors to meld.

Garnish with fresh parsley and lemon slices, if desired.

5. Serve and Enjoy:

Serve your Chicken Piccata with a side of steamed vegetables, mashed potatoes, or a fresh green salad for a complete meal. Pair it with a crisp white wine like Sauvignon Blanc or Pinot Grigio to complement the bright lemon flavors.

Tips:

For a lighter version: You can skip the flour dredging and simply pan-sear the chicken breasts in olive oil and butter.

Add a little extra flavor: For an added punch, a small splash of caper brine or a bit of chicken broth can be used in the sauce.

Make it a meal: Serve with pasta, rice, or roasted potatoes to soak up that flavorful lemon-garlic sauce!

Enjoy this fresh, flavorful dish that captures the essence of spring with every bite!
